Forks Over Knives Lies and Olive Oil


Forks over Knives the documentary has to be the most flawed evidence I’ve seen against olive oil.  They state that the Mediterranean diet is healthy because of the fruit and vegetable content. Have any of these FOK people been to Greece? Doubt it. Greeks eat as much fruit and veg as Aussies. It’s the olive oil!

Facts – VIRGIN or EXTRA VIRGIN olive oil is just the juice of the olives and It’s composition in fatty acids and oder minor components like polyphenols is proven to have healthy effects, including in coronary diseases because it is not refined and doesn’t cause inflammation in our arteries (which causes deposition of cholesterol) like margarine, vegetables oils and olive oil (not virgin).

Plant oils liquify at body temperature. Animal fats solidify. Extra virgin olive oil is COLD PRESSED. It is not refined like white sugar or flour. It is cold pressed. Can’t even be compared. Olive does not clog your arteries! Only animal fats that contain cholesterol does that. Bad cholesterol is only found in one source – ANIMAL FATS! All oils breakdown loose flavour and nutrients, and can develop potentially harmful compounds when you apply heat. olive oils high antioxidant content is especially resistant to these changes. One common myth is that heating olive oil will make it saturated or trans-fatty. This is not true. As far as making a saturated fat, according to Dr. A. Kiritsakis, a world renowned oil chemist in Athens, in his book Olive Oil from the Tree to the Table -Second edition 1998, all oils will oxidize and hydrogenate to a tiny degree if repeatedly heated to very high temperatures such as is done in commercial frying operations. Olive-pomace oils and virgin olive oils are both highly monounsaturated oils and therefore resistant to oxidation and hydrogenation.

Contrary to DR’s medical advice given to patients, there is not a single long term medical study carried on patients known to mankind that backs this medical opinion. In direct contradiction, comprehensive and reputable medical studies confirm up to 40-70 percent of patients who undergo cholecystectomy are likely to develop transient, persistent or lifelong complications. 

The gallbladder has a very important function and can be described as a protector of the liver, pancreas, stomach, intestines and colon. It serves as a storage site tp present bile on demand to process food. Bile is also designed to emulsify (digest) fats. When we eat meals with moderate amounts of fat the gallbladderreleases its stores of bile to aid the liver in digesting the fat. The loose stools and urgency are very common side effects of gallbladder removal and/or dysfunction. 

Because fats are essential for human health, they cannot simply be avoided. Good luck trying! Fats are required in the diet to help us absorb fat soluble vitamins such as Vitamin A,D,E and K. Fats are also important for the brain and our cell membranes. Fats also provide the building block for steroid hormones in the body such as estrogen, testosterone etc 

You cannot be healthy without a gallbladder. You can live, but in many cases be miserable. Some common side effects of gallbladder removal are: Upset stomach, nausea, and vomiting. Gas, bloating, and diarrhea. Persistent pain in the upper right abdomen. Risks include cancer of the Colon, pacreseas and throat (r esophagus) It is a shame when doctors remove the gallbladder. It is the greatest disservice your doctor can do to send you home and pretend you don’t need one. Bet your DR’s never provide you with informed consent on likely risks, which is medical fraud. 

Vegan Pavlova




  • 2/3 cup canned chickpea liquid (less salt is best)
  • 2/3 cup caster sugar
  • 1 teaspoon xanthan gum
  • 2 teaspoons vanilla extract


  1. Preheat oven to 120°C and line a baking tray with baking paper.
  2. Using an electric mixer, beat the chickpea juice until it starts to turn white.
  3. Add the caster sugar, one tablespoon at a time before adding the xanthan gum and 1 teaspoon of vanilla extract.
  4. Once the meringue is firm, carefully pour onto the lined baking tray, making a large disc about 8cm high.
  5. Bake in the oven for 2-2 1/2 hours.
  6. Remove from the oven and allow to cool completely.
  7. Store in a air tight container if you don’t want to use it straight away

Why Fats are Good for you

When properly prepared, olives, like nuts, supply the place of butter and flesh meats. The oil, as eaten in the olive, is far preferable to animal oil or fat. It serves as a laxative. Its use will be found beneficial to consumptives, and it is healing to an inflamed, irritated stomach.—The Ministry of Healing, 298, 1905 – {CD 359.4}
615. Olives may be so prepared as to be eaten with good results at every meal. The advantages sought by the use of butter may be obtained by the eating of properly prepared olives. The oil in the olives relieves constipation; and for consumptives, and for those who have inflamed, irritated stomachs, it is better than any drug. I will tell you a little about my own experience with charcoal as a remedy. For some forms of indigestion it is more efficacious than drugs. A little olive oil into which some of this powder has been stirred tends to cleanse and heal. I find it is excellent. Pulverized charcoal from eucalyptus wood, we have used freely in cases of inflammation…  {PC 38.2}

Eating between meals 


X-ray studies have been conducted to determine the emptying time of the normal stomach. Anything remaining in the stomach five hours after a test meal is abnormal. The stomach usually empties itself in 2 ½ to 4 hours. Series of tests have been run in which persons have been given routine breakfasts consisting of cereal and cream, bread, cooked fruit, and an egg. Vegan mozzarella


This makes about a 350gm block

Just double the recipe if you want a larger block 🙂 1 1/2 cups of rice milk, 1/8 cup olive oil, 1 tsp apple cider vinegar, 1/2 tsp salt, 2 tblsp nutritional yeast, 1/4 tsp garlic powder, 1 tbsp. agar powder 1/4 tsp of maple syrup……. Put everything in a blender & process until it is smooth (about a minute). Then pour it all into a saucepan set over medium heat & whisk constantly until it thickens!! Done. Pour into a lightly greased container of your choice an allow it to cool. Once cooled I put it in the fridge to set. Good luck 🙂 If anyone has a Thermomix (which is what I used). Mix it all up and cook on 90 degrees, speed 3 for about 12 mins with MC off to let steam out.

Baked vegan doughnuts


Muffins that taste like doughnuts. But without all the work and without the frying.

1 3/4 c (all purpose) flour
1 1/2 tsp baking powder
1/2 tsp salt
1/4 tsp cinnamon
1/3 c vegetable or canola oil
3/4 c white granulated coconut sugar
1 no egg
3/4 c soy milk

Combine dry ingred. Mix liquids in separate bowl. Add liquids to dry and combine together well, without over beating. Spoon mixture into prepared muffin tins. Bake at 190 for 20-25 min.

While donuts are baking prepare sugar topping.
1/4 c granulated coconut sugar
1/4 tsp cinnamon

While donuts are hot, dip into (1/2 c) melted coconut oil and roll into sugar & cinnamon mixture.

Fennel, Split Pea, Anise Vegan Soup


1 bunch of garlic

Whole bulb of fennel – set the leaves aside

Spring onions or shallots


Sauté them soft but don’t brown

Use plenty of olive oil.

Boil some water in a kettle and then add chopped root vegetables, potatoes, turnip, carrot but not pumpkin because it turns it into pumpkin soup.

Add a good handful of dried split peas – if you prefer runny soup as less.

Add herbs. I usually have rosemary, maybe some oregano, dill is nice, a star anise pod, salt, chilli, and some massel chicken or veg stock

Bring to boil for an hour and then simmer for another hour or two.

Add fennel leaves chopped before serving.

Tastes much better the following day.

Apple Juice Therapy

As one of the greatest herbs and blood purifiers known, we have the most common fruit, the apple with over 2000 varieties. The chemical breakdown of the apple shows why it has such great value in healing. As Dr Edward E states in his Advanced Treatise in Herbology:

There is no other remedial herb in the whole range of known therapeutic agents that can compare with the apple tree, and although it would be difficult to say which of its many varieties is the greatest, we suggest that its abundance of nascent oxygen compound is probably the main reason why it is such a precious food, blood purifier, and unfailing remedy for so many forms of disease (307).

Fresh apple juice is best, if obtainable, otherwise buy any bottled apple juice that has no preservatives or additives, pure apple juice.

After beginning with sixteen ounces of prune juice first thing in the morning, within one half an hour take an eight ounce glass (regular size tumbler full) of undiluted apple juice.

Swish each mouthful with saliva mixed with it.

Juice must not be gulped. In this way the full value will be obtained and there will be no danger of regurgitation or having it act as an emetic to a weak stomach, but will be very soothing and affable. This procedure will also work well with the pancreas in case of high or low sugar level, with no bad side effects.

Drink two litres of apple juice a day for three or five days.

Do not be unduly alarmed if you feel somewhat weak during or after this detoxification. Nature uses our energies for a housecleaning within us, and we soon regain greater energy and vitality as a result of a cleaner and healthier body. It is good to do the three day cleanse monthly or several times a year.

If there is the slightest tendency toward appendicitis, we would also take high enemies using catnip tea or tea made of three parts red raspberry leaf and one part lobelia – taking two or more enemas daily for one week or longer if necessary.

Vegan Lemon Cake


1 cup of margarine

2 cups of sugar

Mix margarine and sugar together

2 tbs baking powder

1 1/2 tbs vanilla

A pinch salt

1 cup soy milk

3 cups of flour

egg replacer or 1 small jar of baby apple sauce

1 lemon squeezed

Lemon rind optional

mix and bake
