Baked vegan doughnuts


Muffins that taste like doughnuts. But without all the work and without the frying.

1 3/4 c (all purpose) flour
1 1/2 tsp baking powder
1/2 tsp salt
1/4 tsp cinnamon
1/3 c vegetable or canola oil
3/4 c white granulated coconut sugar
1 no egg
3/4 c soy milk

Combine dry ingred. Mix liquids in separate bowl. Add liquids to dry and combine together well, without over beating. Spoon mixture into prepared muffin tins. Bake at 190 for 20-25 min.

While donuts are baking prepare sugar topping.
1/4 c granulated coconut sugar
1/4 tsp cinnamon

While donuts are hot, dip into (1/2 c) melted coconut oil and roll into sugar & cinnamon mixture.

  1. ok, send me a dozen. wait… on second thought… if they taste like doughnuts, forget it. i don’t like doughnuts. ok, nevermind, i’ll try them anyway. matter of fact, make it 2 dozen…
