Vegan Christmas Meat Loaf


This recipe was made up by my hairy friend Sasquatch.

Saute the following:

Chopped onion
One can nutmeat
Grated potato and carrot
Add vege chicken Stock
Mashed Kidney beans and butter beans
Bread crumbs
Kalamata olives
Mashed Sun dried tomatoes, Prunes and Dates

Chop blue potatoes
Leave in stock overnight
Smash macadamias
Drain stock
Add Chilli and Coriander

Baking dish line with baking paper
Lay out a Meat mixture layer
Then add the stuffing
Then add more meat layer

Fold baking paper over top of meat loaf and Smooth with hands over paper

Cook at 120 deg for three hours

Then top with Tomato chutney and Rosemary

Cook on high till top is crisp
