Sarah gave me some muffins today and here’s the recipe;
3/4 cup each of plain flour & whole meal flour
1 tsp healthy non-aluminum baking powder
1/4 tsp salt
3/4 cup rice bran oil
1/3 cup healthy sugar or rapadura
2 tbsp no egg replacer
1/2 cup of raisins.
Pre heat oven to 180 degrees.
Line a 12 hole muffin tray.
Sift flours, baking powder and salt in a bowl and mix well.
Beat oil, sugar and no eggs until blended. Add raisins.
Add the flour mixture mixing enough until just combined.
Bake 20-25 mins.
