Carob Cookies


In this recipe, I didn’t use any measurements as it was all made on the fly at the top of my head.


Some carob – 4 tbs

Some spelt flour spelt S-P-L-E-T – maybe 1 and a 1/2 cups

Vanilla essence – I found some pure stuff with no alcohol

1 small tin of coconut cream

Some rapadura – evaporated cane sugar – its the latest fad in vegan healthy sweetners.

Non-aluminium baking soda

Some olive oil – 2 tbsp


The idea with the above ingredients is to make them moist and soft which the coconut cream and olive oil does. Sift the carob and flour and add the baking soda. Add some rapadura, vanilla essence, coconut cream whatever else is listed above.

With a spoon put the mixture on a baking tray in medium size blobs. Bake at 180 degrees for 15 minutes.

I felt much happier after I ate some of them and even more for dessert at work today.
