Vegan Cherry Slice

Standard

Base

1 cup plain flour

1/3 cup carob powder

1/3 cup sugar

¼ cup olive oil

1 tsp vanilla extract

½ cup ground hazlenuts

For the filling

2 cups frozen cherries, finely chopped

1/2 cup sugar

1 3/4 cups desiccated coconut

1/2 cup soy milk

¼ cup coconut oil

For the topping

150g carob

¼ cup coconut oil

Soy compound powder

Soy milk if required

For the crust: Line a shallow tin with baking paper overhanging the 2 longest sides

Sift the flour, carob and sugar into a bowl. Add the ground hazelnuts, olive oil and vanilla, mix to form a dough

Press the dough evenly into the pan and freeze for 20 minutes

Preheat the oven to 180C

Cover crust with baking paper and bake for 10 minutes, remove the paper and bake for 5-10 minutes more

Let cool completely

For the filling: Combine the cherries, sugar, coconut and coconut oil. Stir in the milk and oil then spread evenly over the cooled crust. Chill for 30 minutes

For the topping: mix the carob, oil and soy compound powder and soy milk if required

Pour and spread evenly over the cherry mix

Chill until set and store in the refrigerator. Nicest served cold.
